Initially, Apple Cake appears to be a simple picture book, but in fact, its contents are quite sophisticated. I suspect that rarely do we think of the chain of events that have led to our eating a particular food item at a meal. With tender illustrations that are filled with emotion, this sweet picture book encourages children to be grateful for the world around them. Though its use around Thanksgiving time is obvious, the book’s message is ageless.

Recipe for a Gluten Free Apple Cake
This recipe is included in the back of the book.
Note… IF you are baking this recipe with your children, I would suggest omitting apple slices. Yes, they add a beautiful detail, however it requires patience.
Ingredients:
½ cup apple
4 eggs
½ cup honey
½ cup butter, melted (or coconut oil for dairy –free)
3 cups almond flour
½ tsp.baking soda
Instructions:
-Preheat oven to 350 degrees. Line bottom of 9 inch round cake pan with parchment paper.
-Peel and core apples, then chop into pieces.
-Measure ½ cup full of apple pieces.
-In one bowl mix almond flour and baking soda.
-In another bowl, whisk together eggs, honey and melted butter. Then add apple pieces.
-Mix wet ingredients into dry ingredients.
-Pour mixture into baking pan and bake for 40 minutes.
-Cool on baking rack.
Note: Apple slices arranged on top of cake – optional
GLAZE is both delicious and beautiful.
-Melt 2 tbsp. of runny honey and 1 ½ tbsp. butter.
-Bring to a boil, stirring.
-Boil for one minute, stirring.
-Cool.
-Spoon over cake, allowing the glaze to drizzle over sides.
